If I was to cut this down to the height I needed would it void the warranty
No, your warranty is with us as supplier of the goods. We don’t shirk our responsibilities and direct any warranty claims to the manufacturer. Altering the height is a cosmetic change and being stainless steel does not have issue of repainting. But, please be sure you want the light before taking to it with your tools; once cut you can’t send it back as a change of mind.

I wondered if the height of this light can be adjusted?
It is not designed to be adjustable. The fixture comes in four parts. Joints use a socket connection and all have three bolts for increased rigidity. If you are mechanically minded you could reduce the length of a pole section and re-drill the holes. The construction is stainless steel so it will take a little longer than cutting mild steel but is within the grasp of a DIYer who has a reasonable shed of tools.
